There's two Hogan matches I'll always remember fondly:

-Hogan vs. Goldberg on Nitro was pretty much THE match of my childhood/early wrestling markdom. Hated Hogan, loved Goldberg. Knew nothing about backstage, how the business works, work rates etc. It was just a guy I loved beating a guy I hated for the title and I got to see it on free TV and I thought it was awesome. Knowing later on that it's one of the worst business decisions of all time makes it funnier, because I can't ever take away how it made me feel as a kid.

-Hogan vs. HBK: watching the result of two grown men just completely refusing to be professional. The comical overselling, Hogan's confusion, the announcers trying to explain it away and make excuses. Fuck it, this ruled.
